Indian Yellow Banana Halwa

Ingredients:
- Indian Yellow Bananas - 4, ripe
- Ghee (Clarified Butter) - ¼ cup
- Sugar - ½ cup (adjust according to sweetness of bananas)
- Cardamom Powder - ½ tsp
- Cashews - 10, chopped
- Raisins - 10
- Saffron Strands - a few, soaked in 1 tbsp warm milk (optional)
Instructions:
Preparation:
- Bananas: Peel and mash the bananas. Ensure there are no lumps. Cooking Process:
- Fry Nuts and Raisins: In a heavy-bottomed pan, heat 1 tablespoon of ghee. Fry the cashews and raisins until golden. Remove and set aside.
- Cook Bananas: In the same pan, add the mashed bananas. Cook on medium heat, stirring continuously to prevent sticking.
- Add Sugar and Spices: Once the bananas change colour slightly, add sugar and cardamom powder. Continue cooking and stirring.
- Ghee: Gradually add the remaining ghee in intervals. Keep stirring until the mixture thickens and leaves the sides of the pan.
- Saffron: If using, add the saffron soaked in milk for a beautiful colour and aroma.
- Finishing Touches: Add the fried cashews and raisins to the halwa. Mix well.
Serving Suggestion:
- Serve the halwa warm or at room temperature. It can be garnished with more nuts if desired.
Tips:
- Consistency: The key to a good halwa is in stirring continuously to get a smooth, non-sticky consistency.
- Ghee: Don't rush adding the ghee. It should be incorporated slowly as the halwa cooks.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
