Introduction

Arvi, or taro root, is a starchy root vegetable that is popular in Indian cuisine. It has a mild, earthy flavor and a slightly chewy texture. Arvi can be used in a variety of dishes, including curries, stews, and fries. It is a good source of fibre and vitamins, and it is also low in calories.

Ingredients:

  • 1 pound arvi root, peeled and chopped
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon salt
  • 1/4 cup water
  • Cilantro leaves, for garnish

Instructions:

  • Heat the oil in a large skillet over medium heat.
  • Add the mustard seeds and cumin seeds and cook for a few seconds, until fragrant.
  • Add the turmeric powder, coriander powder, garam masala, and salt and cook for another minute.
  • Add the arvi root and water and stir to combine.
  • Reduce the heat to low and simmer for 15-20 minutes, or until the arvi root is tender.
  • Garnish with cilantro leaves and serve hot.

Tips:

  • For a richer flavour, you can add 1/2 cup of coconut milk to the curry.
  • If you don't have garam masala, you can use a mixture of cumin, coriander, and cardamom.
  • Arvi root can be stored in the refrigerator for up to a week.

Serving Suggestions:

Arvi curry can be served with rice, roti, or naan bread. It can also be served with a side of yoghurt or raita.
