Ingredients:

  • 1 cup Basmati Rice
  • 2 cups Water
  • 1 cup Fresh grated Coconut
  • 2 tbsp. Coconut Oil
  • 1 tsp. Mustard Seeds
  • 1 tsp. Urad Dal (split black lentils)
  • 1-2 Green Chillies (slit lengthwise)
  • 10-12 Curry Leaves
  • 2-3 tbsp. Cashew Nuts (optional for garnish)
  • Salt to taste
  • Fresh Coriander Leaves (for garnish)

Instructions:

1. Prepare the Rice:

  • Rinse 1 cup Basmati Rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  • In a large pot, bring 2 cups of water to a boil. Add the washed rice and a pinch of salt. Reduce the heat, cover, and simmer until the rice is cooked and all the water is absorbed (about 15-18 minutes).
  • Once cooked, fluff the rice with a fork and set aside to cool.

2. Sauté the Spices:

  • Heat 2 tbsp. Coconut Oil in a large pan over medium heat. Add 1 tsp. Mustard Seeds and 1 tsp. Urad Dal. Sauté until they start to sputter and the dal turns golden brown.
  • Add the 1-2 Green Chillies and 10-12 Curry Leaves, frying briefly until they release their aroma.

3. Toast the Coconut:

  • To the pan, add 1 cup Fresh grated Coconut. Stir well and cook for 2-3 minutes until the coconut is lightly toasted and fragrant. Be careful not to burn it.

4. Combine with Rice:

  • Add the cooled, cooked rice to the pan with the coconut mixture. Gently fold everything together, ensuring the rice is evenly coated with the spices and coconut. Season with Salt to taste.

5. Garnish and Serve:

  • If using, lightly toast 2-3 tbsp. Cashew Nuts in a separate pan until golden and add them to the rice for a nutty crunch.
  • Garnish with freshly chopped Coriander Leaves.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
