Ingredients:

  • 1 cup Upma Rava (Fine semolina)
  • 1 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 cup split urad dal (Black lentil)
  • 1/4 cup split chana dal (Yellow lentil)
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon ginger, grated
  • 1 medium onion, finely chopped
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon chopped coriander leaves
  • Lemon wedges, to serve

Instructions:

  1. Roasting the Rava:
    Heat the oil in a heavy-bottomed pan or kadai over medium heat. Add the mustard seeds and cumin seeds. When they splutter, add the urad dal and chana dal. Fry until the dals turn golden brown, stirring occasionally.
  2. Adding Aromatics:
    Add the green chili (if using), ginger, and onions to the pan. Sauté until the onions turn translucent and fragrant.
  3. Cooking the Upma:
    Gradually add the roasted rava while stirring continuously to prevent lumps from forming. Cook for 2-3 minutes, stirring constantly, until the rava turns light brown and fragrant.
  4. Adding Water and Salt:
    Pour in the water and salt. Bring the mixture to a boil, then reduce the heat to low and simmer for 5-6 minutes, stirring occasionally, until the upma is cooked through and the water is absorbed.
  5. Garnish and Serve:
    Garnish with chopped coriander leaves and serve hot with lemon wedges.

Tips and Variations:

  • For a richer flavour, use ghee instead of oil.
  • Add diced vegetables such as carrots, green peas, or bell peppers along with the onions for a more nutritious and colourful upma.
  • Top the upma with a dollop of butter for an extra touch of richness.
  • Serve the upma with a side of homemade sambar or chutney for a complete Indian meal.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
