Introduction

Instructions

  1. Marinate the Soya beans: In a large bowl, combine the soaked and drained soya chunks, 1 tablespoon of oil, 1 teaspoon of turmeric powder, and a pinch of salt. Mix well and set aside for 15-20 minutes.
  2. Prepare the Masala: Heat 1 tablespoon of oil in a deep pan or kadai over medium heat. Add cumin seeds, bay leaf, and green chili (if using). Once the cumin seeds start to splutter, add the chopped onion and fry until golden brown.
  3. Introduce the Flavours: Add ginger-garlic paste and fry for a minute until the raw aroma disappears. Then, add coriander powder, red chili powder, and garam masala. Sauté for a minute, allowing the spices to release their aroma.
  4. Add the Tomatoes: Now, add the chopped tomatoes and stir continuously until they soften and start to disintegrate. Add water to adjust the consistency of the gravy.
  5. Incorporate the Soya beans: Add the marinated soya chunks and stir gently to ensure even distribution of the masala. Cook for 5-7 minutes, allowing the soya chunks to absorb the flavours and soften further.
  6. Adjust Flavours and Garnish: Taste the curry and adjust the salt as needed. Garnish with chopped coriander leaves and serve hot with roti, rice, or naan.
