Introduction:

Thepla, a savoury flatbread from the Indian subcontinent, is a popular choice for breakfast, lunch, or dinner. Its thin, crispy texture and flavourful filling make it a versatile dish that can be enjoyed with a variety of accompaniments. In this recipe, we will be using samo seeds, also known as mario seeds or bhagar, to add a unique nutty flavour and texture to the Thepla. Samo seeds are a rich source of protein, fibre, and minerals, making them a nutritious addition to your diet.

Ingredients:

  • 1 cup samo seeds, soaked in water for 30 minutes
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon chopped green chilies
  • 1 tablespoon chopped cilantro
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • 2 tablespoons oil

Instructions:

  1. Drain the soaked samo seeds and grind them into a fine flour.
  2. In a large bowl, combine the samo seed flour, whole wheat flour, salt, turmeric powder, red chili powder, green chilies, cilantro, onions, and tomatoes.
  3. Add the oil and mix well until a dough forms.
  4. Divide the dough into equal portions and roll them into thin circles.
  5. Heat a tawa or griddle over medium heat.
  6. Cook the Thepla on both sides until they are golden brown and crispy.
  7. Serve hot with your favourite chutney or yogurt.

Tips:

  • For a more flavourful Thepla, you can add a pinch of cumin seeds, coriander seeds, or caraway seeds to the dough.
  • You can also experiment with different fillings, such as grated paneer, mashed potatoes, or chopped vegetables.
  • If the dough is too sticky, add a little more whole wheat flour. If it is too dry, add a little more water.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
