Creamy Green Lentil Curry

Introduction

This creamy and flavourful curry is packed with protein and fibre, making it a satisfying and healthy meal. The combination of turmeric, cumin, and ginger gives it a warm and aromatic flavour, while the coconut milk adds a touch of richness. Serve it with rice or naan for a complete and comforting meal.

Ingredients:

• 1 tablespoon olive oil
• 1 medium onion, finely chopped
• 2 cloves garlic, minced
• 1 tablespoon grated ginger
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• 1/2 teaspoon garam masala
• 1/4 teaspoon cayenne pepper (optional)
• 1 1/4 cups dried green lentils, rinsed
• 4 cups vegetable broth
• 1 (13.5-ounce) can unsweetened coconut milk
• 1/4 cup chopped fresh cilantro
• Salt and freshly ground black pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, ginger, turmeric, cumin, coriander, garam masala, and cayenne pepper (if using), and cook for 1 minute more, until fragrant.
2. Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer, partially covered, for 30-40 minutes, or until the lentils are tender.
3. Stir in the coconut milk and cilantro. Season with salt and pepper to taste. Serve hot over rice or naan.

Tips:

• For a spicier curry, add more cayenne pepper to taste.
• If you prefer a thicker curry, mash some of the lentils with a fork before serving.
• Serve with a dollop of Greek yogurt or sour cream for added richness.
