Pudina Chutney

Ingredients:

  • 2 cups Fresh Mint Leaves (Pudina)
  • 1 cup Fresh Cilantro (Coriander leaves)
  • 2-3 Green Chillies (adjust to taste)
  • 1 inch Ginger, peeled
  • 2 tbsp. Lemon Juice
  • 1 tsp. Sugar (optional)
  • 1/2 tsp. Cumin Seeds
  • Salt to taste
  • Water as needed
  • A pinch of Asafoetida (Hing) – optional

Instructions:

1. Prepare the Herbs:

  • Thoroughly wash 2 cups of Fresh Mint Leaves and 1 cup of Fresh Cilantro under cold running water. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess water. This ensures your chutney isn't too watery.

2. Blend the Ingredients:

  • In a blender or food processor, combine the prepared mint and cilantro leaves, 2-3 Green Chillies, 1 inch of peeled Ginger, 2 tbsp. Lemon Juice, 1 tsp. Sugar (if using), 1/2 tsp. Cumin Seeds, and Salt to taste.
  • Add a little water, just enough to help blend the ingredients into a smooth paste. Go easy on the water to keep the chutney thick and rich.
  • For an extra layer of flavor, consider adding a pinch of Asafoetida (Hing). It's optional but can add a distinct aroma and taste to the chutney.

3. Taste and Adjust:

  • Taste the chutney. Adjust the salt, lemon juice, and green chillies according to your preference. The chutney should taste fresh, herby, and have a good balance of tangy and spicy flavors.

4. Serve or Store:

  • Serve the Pudina Chutney fresh with snacks like samosas, pakoras, or as a spread for sandwiches. It's incredibly versatile and adds a zesty kick to any meal.
  • If not serving immediately, store the chutney in an airtight container in the refrigerator. It usually keeps well for 2-3 days.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
