Whole Urad Dal Curry

Introduction

Whole Urad dal curry is a traditional Indian curry made with whole urad dal, onions, tomatoes, spices, and water. It is a popular dish in many parts of India and is often served with rice or roti. Whole urad dal is a type of lentil that is high in protein and fibre. It is also a good source of iron and calcium.

Ingredients

  • 1 cup whole urad dal
  • 2 tablespoons oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili pepper, chopped (optional)
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon salt
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 4 cups water

Instructions

  1. Rinse the urad dal in a colander and set it aside.
  2. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, ginger, and green chili pepper (if using) and cook for 30 seconds more.
  3. Add the turmeric powder, coriander powder, cumin powder, garam masala, and salt. Cook for 30 seconds more, stirring constantly.
  4. Add the urad dal and stir to coat.
  5. Add the diced tomatoes and water. Bring to a boil, then reduce heat and simmer, covered, for 30 minutes, or until the urad dal is cooked through and the curry is thickened.
  6. Serve hot with rice or roti.

Tips

  • For a richer flavour, you can soak the urad dal in water for 30 minutes before cooking.
  • If you don't have a green chili pepper, you can substitute 1/4 teaspoon of cayenne pepper.
  • You can also add other vegetables to the curry, such as carrots, potatoes, or peas.

Variations

  • You can also make this curry with split urad dal. Split urad dal will cook more quickly than whole urad dal.
  • You can add a tablespoon of ghee to the curry for extra flavour.
  • You can garnish the curry with chopped cilantro or fresh ginger.
