Yellow Ripe Plantain Curry

Ingredients:

  • 1 ripe plantain, peeled and sliced into rounds
  • 1/2 onion, chopped
  • 1 tomato, chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon chilli powder (optional)
  • 1 tablespoon oil
  • Salt to taste

Instructions:

  • Heat the oil in a pan over medium heat. Add the onions and cook until softened about 5 minutes.
  • Add the ginger-garlic paste, turmeric powder, coriander powder, cumin powder, garam masala powder, and chilli powder (if using) and cook for 1 minute.
  • Add the tomatoes and cook until softened about 5 minutes.
  • Add the plantain slices and salt to taste. Stir to combine.
  • Cover the pan and reduce the heat to low. Simmer for 15-20 minutes, or until the plantain is tender.
  • Serve the curry hot with rice or naan bread.

Tips:

  • For a richer flavour, you can add a splash of coconut milk or cream to the curry.
  • If you want a thicker curry, you can mash some of the plantain slices against the side of the pan.
  • You can also add other vegetables to this curry, such as potatoes, carrots, or peas.
  • Serve with your favourite Indian condiments, such as chutney, yoghurt, and raita.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
