Ridge Gourd Curry

Ingredients:

  • 1 medium ridge gourd, peeled and chopped
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon garam masala powder
  • Salt to taste
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon cumin seeds
  • A few curry leaves

Instructions:

  1. Heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds and let them splutter.
  2. Add the curry leaves and then add the onions. Cook the onions until they are softened and translucent.
  3. Add the ginger-garlic paste and cook for another minute.
  4. Add turmeric powder, red chilli powder, coriander powder, and garam masala powder. Mix well and cook for another minute.
  5. Add the tomatoes and salt to taste. Mix well and cook until the tomatoes are softened and mushy.
  6. Add the ridge gourd and mix well.
  7. Cover the pan and cook on medium heat until the ridge gourd is tender.
  8. Serve hot with rice or roti.

Tips:

  • If you want a thicker curry, you can mash some of the cooked ridge gourd and add it back to the pan.
  • You can also add other vegetables to this curry, such as potatoes, carrots, or peas.
  • For a richer flavour, you can add a dollop of yoghurt or cream to the curry before serving.

Good Price and Value for the product . I will order once again . Website can be improved more ,it was difficult to login as the site was keep on saying no valid user name. I registered by choosing CZ currency which is not valid for EUR . Payment option with paypal can be extended.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
